Slow-Cooker Pork & Hominy Stew

Ingredients

  • 2 1/2 pounds boneless pork shoulder, well-trimmed and cut into 1-inch chunks
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 green peppers, seeded and chopped
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 2 teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 1/4 cups low-sodium chicken broth
  • 2/3 cup salsa verde
  • 3 tablespoons finely ground cornmeal
  • 2 tablespoons chopped cilantro
  • 1 can (15 ounces) white hominy, rinsed and drained

Make It

1. Sprinkle pork with salt and pepper. Place pork in slow cooker with peppers, onions, garlic, chili powder, oregano and broth. Cover; cook on HIGH for 4 hours or LOW for 6 1/2 hours.
