Poached Salmon with Sauce Verte

Ingredients

  • 1 container (7 ounces) 2% fat Greek yogurt
  • 1/4 cup watercress, chopped
  • 1/4 cup flat-leaf parsley, chopped
  • 2 scallions, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups orzo
  • 1/2 pound green beans, trimmed and cut into 1-inch pieces
  • 1 cup grape tomatoes, halved
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 4 pieces salmon fillet (about 4 ounces each)
  • 1 lemon

Make It

1. In a bowl, blend yogurt, watercress, parsley, scallions, 1/8 teaspoon of the salt and 1/8 teaspoon of the pepper. Cover and refrigerate until serving.
